Tasting Table recently unveiled its highly anticipated list of the “absolute best bakery in every state,” and Birmingham’s Last Call Baking Co. took the top spot for Alabama. The bakery, which has cultivated a massive following, is celebrated for its creative rotation of sweet and savory items, including morning buns, coffee twists, and their signature olive oil cake.
A Legacy of Excellence
Chef Chanah Willis opened the doors to Last Call Baking Co. in 2020, quickly building a reputation for high-quality goods. Her work earned her a spot as a 2024 James Beard Award Semifinalist for “Emerging Chef.” While Willis sold the business in 2025 to transition into a new culinary chapter in New York City, the shop continues to thrive.
According to Tasting Table, the secret to their success lies in a rigorous three-day fermentation and lamination process for their croissant dough. The result is a product that keeps customers coming back, though guests are encouraged to arrive early to avoid missing out before the daily sell-out.
